Keeping Positive and Coconut and Flax Coffee Cup Muffins!
Ever heard the saying "you are what you surround yourself with"? Well from my experience, that is the truth! I try to be positive as much as possible, I try to keep the negative thoughts to a minimum and surround myself with positive people when I can. I've had those friends who dwell on bad news and have nothing but negative things to say. But one can only put up with that for so long until those thoughts start creeping into your brain. Unfortunately, I've had to part ways with a few negative-minded friends in order to keep my sanity. But for as many people that I've had to part ways with, I've had just as many wonderfully positive people come into my life!
One of those people is my friend and roommate Jordan (aka Buffy), we knew each other when we both lived back home in Jacksonville and now live together in Brooklyn. I love Jordan because he is always very positive about everything, even in a bad situation he will find the positive, and as an added bonus he is also a healthy fitness-minded person! As you can probably imagine we get along very well! It really makes a difference to come home to that each night, especially after a stressful day of work. Jordan and I are a match made in roomie heaven!
I Recently had the pleasure of meeting his beautiful mother Lyn when she came for her first visit to NYC a few weeks ago. After spending a little time with her, I could see where Jordan gets all of his good qualities from! She too is a beautiful person both inside and out!
Well a few months back before I met Jordan's mom, he made a trip home to visit family. Lyn wanted to send home some treats for Jordan to share with me, but unfortunately it wasn't something I could have because of my soy allergy. Since I couldn't enjoy the treats, his mom emailed Jordan several recipes for "Jorge's Skinny Muffins" that she saw on the Dr. Oz show. What a sweetheart! I liked the idea of these muffins because they are soy, dairy and grain free AND they called for some of my favorite ingredients. I tried making the muffins, but they came out a little on the dry side. I wasn't giving up just yet, so I've played around with several different variations of the recipe and finally came up with a winner! It's simple to make and keeps you feeling full for hours! If you wanted to get creative, you could add fruit to the mixture or top with PB2.

Coconut and Flax Coffee Cup Muffins:
- 2 tbsp ground flax
- 2 tbsp organic shredded coconut
- 3 tbsp unsweetened coconut milk - I use Trader Joe's brand
- 1 tsp coconut flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- stevia to taste - I like mine on the sweet side
- 1 whole egg
Mix all ingredients together in a coffee mug and microwave for 2-2.5 minutes depending on the temperate of yourmicrowave. Remove from the mug and enjoy!
