Chocolate Pear Protein Pancake (soy, dairy & grain free)

This week I've had a bit of sweet tooth after seeing Tone It Up's protein pancake recipe and The Healthy Advocate's waffle recipe (via Fast Paleo) circling around on facebook. So when I got home from the gym tonight, I poured my last sad scoop of protein powder into a bowl with a bunch of my favorite ingredients and whipped up this delightfully ugly chocolate pear protein pancake. It was on its way to being delightfully beautiful pancake until I flipped it chef style and half of it flew across the kitchen. Despite that, it turned out really well and by well, I mean amazing!! 
Chocolate Pear Protein Pancake (soy, dairy & grain free)
Makes 1 large pancake 
  • 1 scoop protein powder - I use Vitol Egg White protein powder - Vanilla Ice Cream Flavor
  • 1/2 sliced organic pear
  • 2 tbsp almond flour
  • 1 jumbo egg (yolk included) and 1 egg white
  • 1 tbsp coconut flour
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp cinnamon
  • Sweetener of choice - I used 8 drops of liquid stevia
  • 1 tsp baking powder
  • a splash of water
Preheat pan with cooking oil of choice to medium-high heat.  Mix all dry ingredients in a bowl together, then mix in eggs, water and sliced pear. Pour batter in pan and cook on a few minutes both sides until done. Plate it with the topping of your choice. Bon Appétit!
