Well hello there!

I‘m Jessie James over at A Spoonful of Freckles and I’m so excited to be posting today! Huge thank you to Amber for having me!

Let’s chat about something a little bit more personal today…Growing up, I battled with stomach problems, mood swings, and weird bumps on my skin! Luckily, I grew up in a family with a knowledge for health all thanks to my grandma who spends a lot of time researching holistic health and healing so we did turn to natural remedies to help!

I blame my birth story for a lot of my allergies and intolerances. Long story short…I was an emergency C-section and as soon as I saw the light of day I was shot up with all sorts of un natural antibiotics to fight the infection. I do understand that most of the measures were probably necessary for my life, but my body has suffered every since.

My poor parents suffered as I was always screaming with stomachaches and an allergy to dairy. They started me on goat’s milk, formulas, and even carrot juice to get me some nutrients since I wasn’t breast fed. My heart breaks for my parents because I must have been an AWFUL baby! So from an early age, I was allergic to dairy, sensitive to wheat flours, and struggling with hormone imbalances. My mom always made two separate meals, one with spelt flour and one with regular flour, spent tons of money on dairy free/gluten free goods, and tried her best to teach us about our intolerances and give us a love for veggies and clean food. Thank goodness she did because as I get older and learn more about my allergies, I am glad she did her best to work around them!

With that said, how do I deal with my intolerances married to a man who has none at all? At first, it was a little tough because I was always bloated, emotional, and trying hard to find the best options, which was probably exhausting for my husband and I wasn’t even fully sure of my allergies. After visiting a Homeopathic doctor, lots of blood tests, and experimenting with food we discovered a whole slew of new intolerances! It wasn’t gluten as we had thought! I am sensitive to white/wheat flours, allergic to dairy, intolerant of any un natural hormones, as well as a whole list of dark green foods! (Sounds insane right?) Honestly I felt I was going crazy because what the heck was I supposed to eat with this new knowledge?!

The first step I would advise is patience. I was initially frustrated and in tears most of the time because I couldn’t get answers…. Once I had someone tell me to write down exactly how I felt an hour after eating for two weeks and I felt like that was a lot of work. Turns out, that’s exactly what helped me figure this all out! My husband is also learning patience as I re learn what to shop for. I can’t make him eat the way I have to because that’s a battle in itself, but he is learning to be supportive of my shopping cart and what I need to feel good. We often eat the same meal but his varies a little from mine. I will be totally honest, it is a little more work but it is SO WORTH IT to feel good! How lucky are we at this day and age to have so many more options for allergy friendly meals than even just 10 yrs ago! These options often taste great too!

I think it is also important to surround yourself with people who are open to being supportive when eating out. It’s much easier to ask the waiter for substitutions when you know you’re not being judged by people sitting at the table. It’s tough not eating the convenient food but your body will thank you for taking a minute to listen and find what is best for you!

I can’t say how great I feel after being more aware of my intolerances. Now, I am far from perfect and slip sometimes with my eating but I do feel it….Just find a balance and don’t give up! Research, get second opinions, and experiment to find what makes you feel better! You don’t have to live bloated or sick your whole life!

Pumpkin Almond Butter Spread and Day 3 of Vlogtober

20121004-151414.jpg It's day 3 of Vlogtober and the theme for today is What's New Wednesday. I was going to share a new product with you guys but I quickly changed my mind after I whipped up this amazing new pumpkin almond topping for my coconut banana pancake!

Pumpkin Almond Butter Spread - 1 serving - 125 calories

  • 1 tbsp almond butter
  • 3 tbsp pure pumpkin
  • Stevia
  • Cinnamon

Mix all four ingredients together and enjoy!

I'm in Colorado!

I just landed in beautiful Denver, Colorado and I'm on my way to Boulder to visit Chris's grandma for a few days. Chris grew up in Colorado and has lived in NYC for the last 12 years or so. He has been back a couple times over the last three years that we've been together but this is my first time going with him AND it will be my first time meeting his lovely grandma! I've heard so many great things about Colorado over the years so I'm super excited to finally be here! I am really looking forward to seeing the beautiful mountains and doing some exploring! I'm already blown away by the colorful leaves on the trees, the bright yellow, orange and maroon leaves are stunning! Fall has to be one of the best times of the year to visit because Fall-time just about anywhere is pretty amazing...well except Florida because it seriously lasts for all of 2 seconds :) But I did get a big surprise when I got here and it was 39 degrees outside (brrrrr!). Yesterday temperature was in the low 80s, what the heck Mother Nature!! Haha oh well, I have my boots, leather jacket and scarf so I will be ok :)

While we are here, we are going to try to keep up with our workouts as I mentioned in my Day One of Vlogtober video. Chris has been a little ill over the last couple weeks so hopefully he has recovered enough to join me!

Banana Omelet Obsession and Day 2 of Vlogtober!

The saga continues...It's day two of Vlogtober and I'm happy to share with you my current obsession...the banana omelet!

I first learned of the banana omelet on @MissMadeInPeru's Instagram a couple months ago. It was one of the easiest and most delicious recipes I've ever made! All you need is a few eggs, one smashed banana, cinnamon, stevia, a nut butter of your choice and some mad omelet making skills and you have heaven on a plate in just minutes!

Banana Omelet Recipe:

  • 1 banana
  • 2 whole eggs
  • 1/4 cup egg white
  • dash of cinnamon
  • a couple of dashes of stevia
  • almond butter for topping

Mash up 3/4 of the banana, mix in eggs, stevia and cinnamon. Poor in a small pan and cook like you would an omelet, flipping once. Serve on a plate with the almond butter topping and the remainder of the banana sliced. Enjoy!

@GoldenLoveNY took it to a whole other level and turned them into pancakes by blending 3 eggs, 2 bananas, 1tbsp of creamy peanut butter, dash of cinnamon and salt. WOWWWWW! I'm definitely trying out this recipe!

Day One of Vlogtober!

Get your vlogging shoes on guys because today is the first day of the Vlogtober challenge! Molly of Miss Molly blog has created Vlogtober to help us bloggers break into the vlogging world.

She has three themed days and the other four are free days to get creative and vlog about whatever you want. I'm really excited about this challenge because I've needed a little push to start vlogging more frequently! The other reason I am so excited about this is I will be starting online classes at Integrative Nutrition on October 29th and I might not have as much time for blogging because I will be focusing on my school work. So instead of blogs you might see more vlogs since it take less time!

In Today's vlog I talk about my goals for this week!

  • Vlogtober - This week I want to vlog 4-5 times!
  • Cardio - I want to fit in 3 HIIT cardio days this week on top of the 4 days I weight train!

My First What I Ate Wednesday!

I started my morning off with a delicious banana omelet made with 2 eggs, 1 white, stevia, cinnamon, 1 banana and topped with 1 tbsp of almond butter.

After my workout I enjoyed a chocolate protein shake (not shown) with a banana and for lunch I had 4oz chicken breast with apples and strawberries (weird combo, I know).

Lastly, for dinner I enjoyed salmon, broccoli, avocado and sweet potato.

Yoga in the Park - Brooklyn Bridge Park

Saturday I had the pleasure of going to Flavorpill and EmblemHealth's Yoga in the Park event at Brooklyn Bridge Park with my lovely friend Meredith from Dare You To.

I've spent a couple weekends enjoying the beauty of Brooklyn Bridge Park and their awesome pop-up swimming pool this summer so I was excited to attend this event!

I met Meredith at a subway station near the park just before 11am. We walked to find the Old Fulton Entrance of the park and did some catching up. There was some great people watching on the way, we saw a super cute wedding taking place near the water, we ogled some cute puppies and drooled over my new iPhone 5 and all it's glory. We finally found the event location after our nice little stroll along the water.

Upon entering the event we received a bright orange pouch from EmblemHealth with a snazzy purple water bottle, a pedometer, hand sanitizer and a pretty purple yoga mat with the handiest little black straps. It was a fun treat that we weren't expecting! I love free stuff :)

We found a great spot about halfway up the lawn from the stage. The view of the water and lower Manhattan was to die for! There were several advanced Yogis around us doing some pretty cool poses and DJ Drez was laying down some amazing beats with violinist Hannah Thiem playing along with him.

The class was led by Elena Brower and Aarona Pichinson, both really beautiful people. I actually received one of Elena's Yoga DVDs at FitBlogNYC this year, but it's still on my to do list (naughty Amber!!!). The focus of the practice that day was bridges and transitions. They guided us through the different poses while the music played in the background, it was a very powerful experience.

The class was about an hour and a half long. After it was done we went up to the front and thanked Elena for a great class. We were so relaxed after and wanted nothing more than to just lay down in the grass and take a nap, such a great feeling! I had such a nice workout, I am still feeling my back, glutes and abdominal muscles almost two days later!

Tips for Avoiding Soy and Other Food Allergies While Eating Out

As you know I am allergic to soy (see "soy belly") and lactose intolerant, a terrible combo to have while trying to dine out! I've had really amazing experiences with accommodating restaurants and really awful ones where I have literally walked out of restaurants crying from frustration. So I have put together a little list of tips to help with dinning out. Obviously my main concern is soy and dairy, but these tips can be applied to other food allergies.

Tips for eating out and avoiding soy:

1. Call ahead before you go and ask to speak to a manager, tell them what your food allergy is and ask what items (if any) you could safely order from the menu. Occasionally you will find very accommodating restaurants who would be glad to prepare you something that is not on the menu. But then again I've also had to leave restaurants because there was not one SINGLE thing I could eat from the menu due to everything being marinated in vegetable oil. You just never know until you ask!

2. Tell your server that you have a food allergy upon sitting down and ask for an allergy menu. Not every restaurant has one, but it is great when you can find one!

3. Ask the server questions about cooking oils, marinades and sauces. Vegetable oil (Soybean oil) is a very common cooking oil because it is cheap. I can't tell you how many times I've told servers I have a soy allergy and they tell me not to worry because they cook with vegetable oil (DOH!!). Most servers are not educated about food allergies so you need to be a detective and ask a lot of questions!

4. Talk to others who have  food  allergies in the area and find out what their favorite restaurants are. My go to restaurants are Bareburger, Dig Inn and Whole Foods Market because they have several soy-free meal options, the food is amazing and they have several locations around the city. So find your go to spot so you always have something to fall back on!!

5. Check Allergy friendly websites and phone apps such as Allergy Eats or do a search in Yelp or Google for allergy friendly restaurants.

6. From my experience I've noticed that the hardest restaurants to avoid soy in are Mexican and Asian/Thai. Of course those are two of the most delicious cuisines (booo)! But don't lose hope, Italian restaurants are great for avoiding soy because most of them cook with olive oil.

7. Lastly be prepared to be disappointed and uncomfortable from time to time. No one likes to have to leave a restaurant or seem like the "picky" eater, but just remember how important it is to avoid these foods and the people you are with are not the ones who will suffer from the reactions.

My First Hot Mess Pilates Class at Sacred Brooklyn

Last night I was going through my emails and saw an email deal that I saved for Sacred Brooklyn's Pay-What-You-Desire Demo Week. When I first got the email I planned to take advantage of this awesome deal and take several classes during the week since the studio is only one block from my apartment, but it completely slipped my mind and I ALMOST missed the whole thing! Luckily I was able to book late last night and join the 1 hour and 15 minute Hot Mess Pilates class today at noon with Aimee Cox.

"Hot Mess (Hot Pilates) - Yep. We’ve all felt like a hot mess – probably more times than we’d like to remember. This unique Pilates class combines meditation and stretching in a heated room so we can tap into our centers, our core. This focus on the core is a practice that leads to more control over our bodies and our lives leading to deeper peace and, maybe even, less hot messiness. The benefits of Pilates are endless…longer, stronger and leaner muscles, increased flexibility, injury prevention, relief from back pain, improved posture, better body alignment, more efficient and graceful movement, and improved mental focus. All of this plus a heated room makes the work happen with a little more ease. This is a beginning – intermediate level mat Pilates class that is uniquely adaptable to the needs and current capabilities of each individual. So come as you are and receive the gifts that Pilates has to offer. Taking a Pilates class at least one day a week is an incredible way to support and deepen your other yoga, dance or athletic practices."

 Aimee was beautifully fit, she had killer arms and legs and of course great abs. :) She welcomed everyone to the class and took time to greet all of the newbies and tried to learn all of our names. One thing that I like about this studio is the teachers do almost the entire workout with you. There is nothing worse than a teacher who talks you through the moves rather than show you. I'm a very visual person so this is important to me!

We first started out with a little meditation and stretching, then worked our entire body with resistance bands. We focused on working our core and keeping our glutes and inner thighs engaged through each movement. The room was blazing hot the entire time, I had sweat dripping off of me after about 5 minutes into the workout, love that feeling!! She mixed some yoga moves into the workout so I got a really good stretch in, thank goodness because lately my body has been abnormally tight. I also really enjoyed working with the bands, I could feel my muscles working hard to fight the resistance of the bands, good stuff! I came out of the class looking like a hot sweaty mess so I give the workout an A+!

This was my second class at Sacred and definitely won't be my last!  They have great teachers, convenient location (1 minute walk from my house), friendly staff, and clean studios. Another reason they are awesome is they give back to the community by offering free warm yoga classes at noon on Saturdays, they have free meditation classes, AND they offer a work-study program where students can work 5 hours a week in exchange for free weekly unlimited yoga classes, AWESOME! The classes are usually about $20 a pop, but they seem to have deals often, so I will be keeping my eye out for them in the future.

Coconut Banana Pancake Recipe (soy, dairy & grain free)

For the past two mornings I decided to do something a little bit different for breakfast. Instead of making my usual two egg omelet, I threw my two eggs into a mixing bowl along with some coconut flour and whipped up some amazing pancakes! I guess tecnically they could still be considered a protein pancakes because of the eggs! The first day I made the pancakes I used just coconut flour, eggs, banana, coconut milk, spices and topped it with 100 calorie Barney's almond butter and today I just added chia seeds and topped them with PB2 powdered peanut butter. Both were very delicious, but I think I prefer them without the chia seeds because they were a little more on the fluffy side! I think you could get really creative with these, I think I might add nuts or blueberries next time!  Enjoy and let me know what other ingredients or toppings you would add to these delicious pancakes!

  •  Coconut Banana Pancake (soy, dairy & grain free)
    Makes 3 small pancakes - 1 serving
    • 2 whole eggs
    • 1 whole banana
    • 2 tbsp organic coconut flour
    • 1/3 cup Trader Joe's Lite Coconut Milk
    • Cinnamon & stevia to taste
    • dash of baking soda
    • extra virgin coconut oil
    • PB2 or 1 tbsp almond butter for topping

*Optional - add 1 tbsp chia seeds

Mix all ingredients together except the coconut oil and PB2/almond butter toppings. Set your stove to medium to medium-low heat, preheat frying pan. Heat will vary depending on the type of stove you are working with. I have a gas stove, so my stove top gets very hot and cooks my food very quick. Once the pan is hot, toss in a small scoop of extra virgin coconut oil to coat the pan. Pour the batter into the pan, cook pancakes for a couple minutes on both sides until golden brown brown, flipping once. Brush the top of the pancakes with coconut oil and top with either PB2 or almond butter. Bon Appétit!

New Whole Foods Opening and Donating 57 Salad Bars to NYC Schools!

I have exciting news to share with you all! This Thursday, August 23rd, Whole Foods Market is opening up their very first store on the East Side of Manhattan. They will be located on 57th Street between 2nd and 3rd Ave.

I am going to wake up bright and early so I can attend the Bread Breaking Ceremony! The ceremony starts at 8:30am and the doors of the store will open at 9am. Coffee, juice and breakfast snacks will be provided, AND the first 250 shoppers will have an opportunity to walk away with a free Whole Foods Market 57th Street canvas bag! I'm hoping to snag one of those babies!

During the ceremony they will be announcing a donation of 57 salad bars to schools throughout New York City's five boroughs. This donation will be made in partnership with the Mayor’s Fund to Advance New York City and Whole Kids Foundation, a Whole Foods Market foundation dedicated to improving childhood nutrition through increased access to healthy foods. Also 5% of total sales from the opening day will go towards the school salad bar donation.

What amazing news for the children of NY!  With childhood obesity on the rise, children need all the help they can get when it comes to eating a healthy diet!

I myself am especially excited about this store opening up for 3 reasons: 

  1. I LOVE Whole Foods because they offer a large selection of quality health foods that are often hard to find at other grocery stores and it is nice to have several options around the city.
  2.  They have and amazing food bar, it is one of the few places I in the city I can get really good foods without being contaminated by soy or dairy.
  3. Because I have been waiting SO long for a Whole Foods to open up near my boyfriends apartment (also on the East Side) and now I will finally have good food to eat! :)

Whole Foods is always giving back to the community and making an effort to help educate Americans on living healthy lives.  On May 29th I had the pleasure of meeting and hearing Whole Foods Market Co-Founder & Co-CEO, John Mackey speak on health and wellness in today's culture. He touched on the following topics:

  • Preventing heart disease and cancers by adding large quantities of fruits and vegetables to our diets.
  • Instead of American's limiting foods while dieting, they should add nutrient dense foods and eat until they are full!
  • Healthy Eating Myth: It is expensive! American's should factor healthcare costs into the cost of food.
  • Our nation is overweight and unhealthy, we have the knowledge to prevent. We need to educate ourselves in order to be healthy.
  • Healthy foods do not have to taste boring! We can adapt to a healthy diet and learn to love foods, just like people learn to love a healthy diet.
  • Doctors do not want to talk to patients about healthy eating because they aren't qualified to and they don't believe it matters.
  • Vegetables only have 100 calories per pound and fruits only have 300 calories per pound. Juiced fruits may be worse for you because the sugar is extracted from the fruit cells and rushes into the bloodstream.

He also gave us some great information about Whole Foods Wellness Club. If you are not familiar with the Wellness Club, it is a program where you pay a monthly fee and get perks like 10% discount on a wide variety of healthy foods, Supper Club discounts, unlimited classes in cooking, nutrition and healthier lifestyle choices, cooking demos, events and access to other local business that promote health and wellness.

In the past the club cost somewhere around $45, but Mackey told us that they were working on lowering the price and offering more virtual classes to keep cost down. Sounded like good news to me because although you do get the shiny 10% discount, it still sounded a little on the expensive side.
I think Whole Foods is doing great things, I'm definitely looking forward to attending more events and taking advantage of some of the great wellness classes they offer! I will let you all know how Thursday goes!

When I first started started to develop clean eating habits and found myself in the gym more and more, I looked to others for inspiration. I searched the web and magazines for other women who lived a healthy lifestyle and I was inspired by hearing their stories and looking at their photos. These ladies helped me to believe that I could continue to live this healthy life! This lovely lady was and still is a HUGE inspiration to me! I first found her on facebook, I followed her fitness modeling career and watched as she helped to create The Sweaty Betties. She is dedicated to living a healthy life and to helping others be healthy and fit. She is funny, creative and truly has a heart of gold!

I think many of you already know this amazing gal but in case you don't, I am please to introduce you to Danny-J from The Sweaty Betties!

How did you come to love the world of health and fitness?

I was a gymnast growing up so I loved being physically active, but it wasn't until college that I realized how much diet played a part in everything. I had a lot of anxiety and depression and changing my diet changed my body as well as my entire mental outlook. Then an unfortunate illness that left me paralyzed and in the hospital, eventually got me back into the gym and I decided then that maybe this was something I could do for a living, help others!

 What is a typical day of eating for you? 

Oh wow, you picked a bad time to ask that question! LOL. Currently, I am living with my parents, in a temporary move, I just moved from Utah to Vegas and I am moving to Dallas soon, so my meals have been very inconsistent! I don't like it! BUT lately I've been having 3 eggs cooked in coconut oil and some fruit most mornings. I have been trying to rebuild a damaged metabolism, so I am consuming a lot more fats and trying to eat more when I feel like I need to. In the past, I planned meals every 3 hours, with protein at each meal---> lots of chicken, fish and turkey. Veggies at nearly every meal and lots of sweet potatoes and brown rice.

I am becoming a little more open to new ideas about food, and realizing that some people can lose a lot of weight on high fat diets and honestly, there is no "one size fits all". I would consider my eating more typical of Paleo, because I don't buy breads or many grains. However, I will have a Subway Sandwich when I'm out! AND shhhhhh (don't tell the Paleo peeps) I don't like bacon.

What is your favorite healthy and naughty meal? How often do you have cheat or treat meals?

My favorite "naughty" meal is probably any Thai food! I wouldn't even consider it naughty, but if I have a chance to eat out and have something different, thats what I'll choose. I usually gain at least 5 lbs the very next day though, just due to the sodium content! Even if its just chicken and soup broth! LOL My favorite healthy meal is simple-- just grilled chicken, stir fry veggies and sweet potatoes! I could eat that every day, I like to mash everything up with the sweet potato, so it doesn't look all that pretty.

I used to NEVER have cheat/treat meals, it was kind of a Pandora's Box thing to me. Then I had this metabolic damage and I kind of went extreme the OTHER way--- ate/drank whatever I wanted (which was not always the best)

Now I have found some balance and I really just eat what I want, which is usually healthy and if I get invited out with friends or to parties, I try some of the things I want but for the most part I choose healthier things. I've found that my MENTAL space has changed and I no longer crave all the junk because I don't think "I can't have this"

It took awhile to get here, but I feel like balance is necessary, you can't live life in a world being so restrictive all the time.

 

Do you have any food allergies, intolerances, or foods you choose to avoid? If so what are they and what do you do to keep them out of your diet?

Haha, I don't! Sometimes I say that I WISH I did, so I wouldn't want junk so bad. One of my friends is deathly allergic to peanuts, so she usually can't eat chocolate because most of it is also processed on machines that have nuts. I used to say I wish I had that as a reason, like I'd die if I eat bad stuff so it would be easier.. but, no such luck. I can and will eat just about anything, if given the chance.. LOL For me, if its not in the house, its not an issue, so I don't buy bread and pasta and chocolate.

 What motivates you to stay healthy? What is your current workout program?

My family motivates me... and not in the way you would think. The majority of my family is overweight and have a lot of health issues. I don't want to be that way. I've always been slightly obsessed with health and I'm also a very disciplined person, so I think my discipline has helped me. Currently, since I'm still on a metabolic "rehab" type program and between homes, so I have no gym, I am just doing a lot of my own made-up workouts (in the garage) and posting them on my page. I also take my dogs on leisurely walks and am taking a boot camp class taught by a good friend of mine once a week. I'm not sticking to a regimented schedule at the moment, just trying to listen to my body.

I WAS doing my 12-week program (which is avail for free for anyone to download) until I moved. I plan on starting back up on that again when I get to Dallas and have a gym and then I will probably sign up for Crossfit once I finish the 12 weeks and recondition my body. Its very important to have a good base when doing Crossfit, I think.

What has been your biggest fitness struggle?

My biggest fitness struggle has been one that I have openly shared this year, my issues with metabolic damage. It was caused because I LOVED fitness maybe too much. I pushed too hard for too long and I thought I should just do more, more, more. I had to totally stop! For someone like me, that LOVES to be active and that had so much of my identity wrapped up in fitness, it was rough! Emotionally and mentally it was probably harder to give it up, because physically, my body needed a break. I am determined to help people who are going through the same experience. I find that trainers and group ex instructors often have this happen, because we love fitness so much and want to help others so much, that we don't take enough time off and our bodies just shut down eventually. It actually even got to the point where I hated exercise and I would drive to the gym and cry in the parking lot because I didn't want to go in.

I'm happy to say I'm past that now, and I'm excited to workout again, with a more balanced approach and I love the NEW way I'm living my life now, with fitness a PART of it, not all of it.

 What is your top most rewarding experience since dedicating yourself to helping others reach their personal health and fitness goals?

There are sooo many! I am so lucky to have clients that really let me into their lives. When you work one on one with people, you really get to know so much about them and you see them transform in front of you. I've had women who come to see me; overweight, in tears and can't even look in the mirror when they work out----> to months later-- literally showing off their muscles, smiling, telling me stories about the comments people make about their transformations and you just would never know its the same person. Lives literally change forever. I've experienced so many moments of pride in my clients, often they end up inspiring their friends and family and suddenly you've opened up a world for them that they never dreamed for themselves. Its a pretty blessed place to be.

 What is going on with your amazing blog The Sweaty Betties now and what can we expect to see in the near future?

Oh wow! So many exciting things! First its the One Year Birthday of The Sweaty Betties, so I have some great gifts and giveaways in a contest soon (keep your eye on Facebook!). Then I have a new site being worked on where anyone can log-on to the community and share ideas and there will be a members access area so if people want workouts they can download every month, they will be there! I understand that not everyone can afford me to train them at $500-$600 a month! (I couldn't even afford myself! LOL) BUT this way, I can charge a nominal amount (I'm thinking $8-12 a month) and you will be able to get my workouts with videos and access to me for questions all in a supportive community. There will also be recipes and meal ideas of course:) Then, I'm excited to be holding a workshop in Las Vegas, Oct. 20-21st called Inspiration & Perspiration. It will be a weekend of fun! tough love, self-love, workouts, meal ideas, balance and friendship. I have two wonderful guests-- Rebeckah "Bex" Borucki from Bexlife.com (she's a youtube star) who is going to teach yoga for healing and share her amazing personal story. I also will have Angie Gooding-- Body Image Specialist who will share her amazing personal journey and how to love our bodies and have a better relationship with food and ourselves. Bob Harper's "The Skinny Rules" Book Launch

Spring with FitFluential this year turned out to be pretty amazing, I got to attend the #FitBlogNYC and met so many wonderful people, I briefly met the Tone It Up! girls, AND I also got the opportunity to go to Bob Harper's launch party for his new book" The Skinny Rules". So much has happened since then, I'm still playing catch-up with all of the FitFluential gloriousness! The launch party was back in mid-May, before the party I met up for a quick dinner at Whole Foods with some of my lovely blogger friends, Meredith from Dare You To, Carlyn from Just Keep Sweating, and Cat from Breakfast to Bed. I made a colorful salad with chopped turkey breast, Caryln had a veggies burger with sweet potato fries, Cat had a nutrition bar, and Meredith had sushi and seaweed (That right there is one of the many reasons I love eating at Whole Foods, there is really something for everyone). We enjoyed our dinner and then met up with Nicole from Making Good Choices.

We headed over to the event, it was held at LAFCO, a beautiful candle and fragrance boutique in New York City. The place smelt really amazing, it was a very unique place to have a book launch. We had a pretty decent sized group of bloggers there. We all chatted and got to know one another better over cocktails. I sipped on Svedka vodka, soda with a splash of cranberry and a lime. They also served beautiful petite passed hors d'oeuvres. They had cauliflower soup shots, mini rice cakes with cheese, spinach and cheese balls, and some sort of small pastry with banana over the top. I didn't have any of the treats because everything seemed to be topped with some sort cheese, but all who did indulge said the food tasted great!

While we waited for Bob to make his appearance, Meredith spotted some former Biggest Loser contestants. She knew exactly who they were and went over to mingle with the weight loss stars, which looked amazing by the way! Bob finally made it to the event, it was so exciting to see him in person! He was very handsome with his facial hair and stylish glasses. His publicist walked him around the room to mingle with all of the important people first. He then gave a small speech mostly just thanking all of the people who helped him write and publish his book. Then after that he made a point to go around and talk to everyone else in the room. I think we were the last people to talk to him since we were all standing near the front of the room. He was very friendly and took a couple minutes to talk to everyone in our group. We all took a lot of great pictures with him, it was all very exciting!

On the way out I received a gift bag with copy of his book "The Skinny Rules", his Total Body Transformation DVD, an adorable Psycho Bunny hat, Eau D'italie bath salts and a lovely scented candle from LAFCO.

Actually, this isn't only a rule book. Part I of the book is "The Skinny Rules" -- the 20 principles you need to read, understand, and really try to live by. But then I've also created Part II, "The Skinny Way" -- a day- by- day menu plan that will get you through the first 30 days of living by the rules. And Part III, "The Skinny Tools," houses the recipes and tips that you'll be called on to look at, cook, and consume! My intention is to take the guesswork out of losing weight for you. After the first 30 days on the program, you will have lost weight and you'll be more confident in eating and living according to my rules. By then you're likely not going to need all of the handholding I provide in this book. You will be on your way to a skinny life!

Chocolate Coconut Protein PowerCake Recipe

Todays Powercakes #Junepowermealaday was FAVORITE POWERCAKE! I've still not yet tried one of Kasey's Powercake recipes, but they all looks and sound delicious! I think I'm most intrigued because they remind me a lot of my beloved protein pancake recipes! So first thing this morning I went on PowerCakes blog and started searching for a recipe. I found several recipes that sounded amazing, but the Jamaican Me Crazy PowerCake really jumped out at me! I tweaked the recipe a little by adding my PlantFusion protein powder and instead of baking it I cooked it in the pan. After it was done, I topped it with almond butter. So technically it was not a REAL PowerCake, but more of a PowerCake spin-off. Regardless it was mouthwatering good!

I promise I will be trying a REAL PowerCake very soon, so stay tuned!

My 30 Day Countdown to Hawaii Get Fit Checklist!

The countdown is on until my Hawaii vacation, yay! So now I have exactly 30 days to get it right and get it tight! I definitely want to look my best while I am on vacation, so I made a checklist that I will follow strictly for the next 30 days. image

• Eat clean foods - lean poultry, grassfed beef, veggies, coconut oil, eggs, sweet potato, plantains, fruit, coconut milk, Plantfusion protein powder • Eat 5-6 meals a day • Train hard & lift heavy • Lift weights 3 days a week (upper & lower split) and cardio 5 days a week • Work abs 3 days a week • Limit carbs to early part of the day and after my workouts • 1 cheat meal a week • Drink plenty of water • Limit alcohol consumption

**Mission get it right and get it tight is full effect!

3 Recipes: Banana Chocolate Chip Omelet, Garlic Ginger Plantains & Clean Crab Cake

Today I've been in a cooking mood and have actually had the time to cook, yay! I've had a banana and Enjoy Life chocolate chip omelet, plantains with guacamole, and clean crab cakes, so far everything has been a winner! Check out the recipes below, all 3 are soy, dairy and gluten free!

Banana and Enjoy Life Chocolate Chip Omelet:

• 1 small banana mashed • 2 whole eggs • 1 serving of Enjoy Life Chocolate Chipsstevia and cinnamon

Mix all ingredients together except for the chocolate chips. Pour in a oil coated pan, I use coconut oil, and cook on medium heat. Let omelet cook for a couple minutes, just enough so you can easily flip without a mess, before flipping omelet sprinkle chips onto the top of the omelet and then flip. Cook another minute or so until omelet is set.

Garlic and Ginger Plantains:

  • 3 ripe plantains
  • 2 tbsp coconut oil
  • Seasoning - garlic, salt, ginger
Peel and slice plantains. Coat pan with coconut oil, lay sliced plantain flat in the pan. Season with garlic, salt and ginger, cook for A fewl minutes, then flip and season other side, cook a few more minutes until done.

Clean Crab Cakes:

• 1 small can of white crab • 1 whole egg • 2 tbsp ground flax • 2 tbsp almond flour • 1/2 tbsp coconut flour • season well - I used garlic, salt, onion powder, ginger, basil, oregano

Place all ingredients in a bowl, mix well, then form into pattys. Fry in pan on medium heat in coconut oil, flipping a couple times until cooked thoroughly on both sides. Enjoy!

10 Day Photo Roundup of the #JunePowerMealADay Clean Eating Challenge

Time flies when you are having fun! Over a  week has passed since the start of PowerCakes #JunePowerMealaDay clean eating photo challenge. I've enjoyed seeking out the meal of the day and getting creative with my photos on Instagram!

Here is my 10 day PowerMeal lineup:

Day 1: Eat a rainbow - My Power salad! Spinach, zucchini, squash, carrots, tomato, cashew, pecan, bok choy, red and yellow peppers, chicken, beef, balsamic, and olive oil

Day 2: Red - I didn't eat anything red  that day, so I'm posting my beautiful strawberries from a couple days before

Day 3: Orange - Breakfast was sweet potato, eggs, almonds, stevia and cinnamon

Day 4: Yellow - Plantains cooked in coconut oil, with egg, brussels, broccoli and beef bacon

Day 5:  Green - I had delishsalad with spinach, chicken, cranberries, walnuts and balsamic vinegar from Bare Burger

Day 6: Blue - I enjoyed some post workout blueberries along side my vanilla protein shake

Day 7: Purple - I had a purple cabbage and lettuce leaf salad with grassfed beef, tomato, peppers, zucchini, cucumbers, hard boiled eggs, oil and vinegar

Day 8: Pre-workout - I had beautiful yellow pineapple and walnuts

Day 9: Post-workout - I made my favorite post-workout pumpkin protein pancake

Day 10: PowerBreakfast - Eggs, kale, and my coconut flax single serve coffee cup muffin

Keeping Positive and Coconut and Flax Coffee Cup Muffins!

Ever heard the saying "you are what you surround yourself with"? Well from my experience, that is the truth! I try to be positive as much as possible, I try to keep the negative thoughts to a minimum and surround myself with positive people when I can. I've had those friends who dwell on bad news and have nothing but negative things to say. But one can only put up with that for so long until those thoughts start creeping into your brain. Unfortunately, I've had to part ways with a few negative-minded friends in order to keep my sanity. But for as many people that I've had to part ways with, I've had just as many wonderfully positive people come into my life!

One of those people is my friend and roommate Jordan (aka Buffy), we knew each other when we both lived back home in Jacksonville and now live together in Brooklyn. I love Jordan because he is always very positive about everything, even in a bad situation he will find the positive, and as an added bonus he is also a healthy fitness-minded person!  As you can probably imagine we get along very well!  It really makes a difference to come home to that each night, especially after a stressful day of work. Jordan and I are a match made in roomie heaven!

I Recently had the pleasure of meeting his beautiful mother Lyn when she came for her first visit to NYC a few weeks ago. After spending a little time with her, I could see where Jordan gets all of his good qualities from! She too is a beautiful person both inside and out!

Well a few months back before I met Jordan's mom, he made a trip home to visit family. Lyn wanted to send home some treats for Jordan to share with me, but unfortunately it wasn't something I could have because of my soy allergy. Since I couldn't enjoy the treats, his mom emailed Jordan several recipes for "Jorge's Skinny Muffins" that she saw on the Dr. Oz show. What a sweetheart! I liked the idea of these muffins because they are soy, dairy and grain free AND they called for some of my favorite ingredients. I tried making the muffins, but they came out a little on the dry side. I wasn't giving up just yet, so I've played around with several different variations of the recipe and finally came up with a winner! It's simple to make and keeps you feeling full for hours! If you wanted to get creative, you could add fruit to the mixture or top with PB2.

image Coconut and Flax Coffee Cup Muffins:

    • 2 tbsp ground flax
    • 2 tbsp organic shredded coconut
    • 3 tbsp unsweetened coconut milk - I use Trader Joe's brand
    • 1 tsp coconut flour
    • 1/2 tsp baking soda
    • 1/2 tsp cinnamon
    • stevia to taste - I like mine on the sweet side
    • 1 whole egg

Mix all ingredients together in a coffee mug and microwave for 2-2.5 minutes depending on the temperate of yourmicrowave. Remove from the mug and enjoy!

PowerCakes Clean Eating Photo Challenge!

You know I LOVE posting pictures of my food anyway and I now have a serious obsession with instagram, so this should be fun! image

The topic today is Eat The Rainbow! For lunch today I made a Power Salad at Whole Foods with spinach, zucchini, squash, carrots, tomato, cashews, pecans, bok choy, red and yellow peppers, chicken, beef, balsamic, and olive oil. It was beautiful and delicious!
